Method:
1. Pour the heavy cream into a saucepan and heat it over medium heat until it starts to simmer. Make sure not to let it boil.
2. While the cream is heating, split the vanilla bean lengthwise and scrape out the seeds. Add both the seeds and the empty bean pod to the cream. If using vanilla extract, add it at this stage.
3. In a separate bowl, combine the gelatin powder and cold water. Let it sit for a few minutes until the gelatin granules absorb the water and become soft.
4. Once the cream has simmered, remove it from heat and take out the vanilla bean pod. If using vanilla extract, skip this step.
5. Add the sugar to the cream and stir until it dissolves completely.
6. Microwave the bowl of gelatin and water mixture for about 10 seconds until the gelatin becomes liquid. Alternatively, you can place the bowl over a pot of simmering water and stir until it dissolves.
7. Pour the gelatin mixture into the cream, stirring continuously to ensure it is well incorporated.
8. Divide the mixture evenly into serving glasses or molds. Let them cool to room temperature before chilling in the refrigerator for at least 4 hours, or until set.
9. Once set, remove the panna cotta from the refrigerator and, if desired, garnish with fresh berries. Serve chilled.
Note:
- Make sure to use good quality heavy cream for the best texture and flavor.
- Do not let the cream boil, as it may curdle and affect the smoothness of the panna cotta.
- If you prefer a stronger vanilla flavor, you can use an additional vanilla bean or add more vanilla extract.
- To unmold the panna cotta easily, dip the molds in hot water for a few seconds before turning them upside down onto a plate.
